Sambal Sotong

Tips For Preparing The Squid

It is extremely important to properly clean the squid. Let us see how can we do it

1- Remove the head from the body with care. Entrails should follow suit. If there is an ink sac, remove it.

2- Discard the squid’s transparent cartilage.

3- Cut the squid into rings.

4- Remove the tentacles from the head. Squeeze out and chop off any bony squid beaks that you find.

5-The squid has been cleaned and is now ready for usage.

Making Sambal Sotong With AsianMeals Sambal Tumis Sauce

 Ingredients:

  • 120gm (4.2oz) of Asian Meals Sambal Tumis sauce
  • 360gm squid, cleaned and cut into rings
  • 1 medium onion, sliced

Cooking Method:

  • Preheat the wok and add in Asian Meals Sambal Tumis sauce.
  • At high heat, add squid, and stir fry for 2 minutes.
  • Add in onions, cook for a further 2 minutes and serve.

Chef tips: Squid can be replaced with prawns, clams, mussels or crabs. You may prefer to blanch the squids in boiling water to prevent “bleeding”.

How To Enhance Your Sambal Sotong

The sambal recipe provided here is simple. While We think this is great on its own, you may amp up the Sambal Sotong by adding belachan or fermented dried shrimp paste. The belachan provides a depth of umami from shellfish that complements the Sambal Sotong. If using belachan, reduce the amount of salt used because belachan already contains salt.
