Ingredients You Need

  • 450 gm rice vermicelli
  • 4 chicken thighs without skin

  • 2 medium onions
  • 3 cloves garlic
  • 1 stalk lemongrass
  • ½ julienned cucumber
  • 3-4 sprigs of mint leaves

  • 50 gm cup curry powder
  • 60 ml vegetable oil
  • 7 cups of water
  • 3 pandan leaves
  • Salt to taste
  • Sambal

How to Cook?

1. Prepare the spices for making this rice noodle soup bowl. Peel the onions and cut them into chunks. Peel the garlic cloves and halve them and slice some rings of the lemongrass. Shred and knot the pandan leaves and thickly slice the ginger

2. Blend onions and garlic along with ginger and lemongrass with some water until fine. Add the curry powder and make a thick paste.

3. Heat the oil in a pot. Stir-fry the paste over medium heat. Once you can smell the fragrance, add the chicken. Stir-fry for about 3-4 minutes.

4. Toss in the pandan leaves, pour water, and bring to a boil. Now reduce the heat and let the pot simmer for 15-20 minutes.

8. Now add the tofu cubes and the salt. Bring to a boil.

3. Vegetarian Curry Laksa

  • 300 gm rice vermicelli

  • 1 cup of coconut milk
  • 2 cups vegetable stock
  • 1 tablespoon vegetable oil
  • 6 tablespoons red curry paste
  • 1 teaspoon curry powder
  • Salt to taste
  • 3 teaspoons granulated sugar
  • 1 teaspoon sambal oelek

How to Cook?

1. Add oil and curry paste in a pan on low heat. Stir for 8-10 minutes until the color turns darker.

2. Add some of the vegetable stock and stir until the paste dissolves.

3. Now, add the remaining stock along with green beans, coconut milk, curry powder, sambal oelek, salt, and sugar.
